Food safety is a major public health concern and its control is a priority for the food supply chain. My PhD project, whose final goal is to provide new tools for food safety, can be divided in two axes:  the development of apta- and peptide-sensors for detection of Campylobacter spp. and B. cereus spores and vegetative cells in milk and chicken meat; the investigation of an innovative active packaging implemented with metal oxide nanoparticles with antioxidant and antimicrobial properties. The work is under supervision of Jasmina Vidic and aims to provide a portable electrochemical device for food safety analysis. I obtained bachelor’s degree in “Food Science and Technology” in 2017 at the University of Padova, Italy. I moved at the University of Udine and I obtained a master degree in “Food Science and Technology” in 2020, with the thesis entitled “Detection of B. cereus spores in milk using an electrochemical apta-sensor” under an international mobility for thesis program at Micalis Institute (INRAe), under supervision of Marisa Manzano and Jasmina Vidic. From July 2020 to May 2021 I’ve worked as research assistant at Micalis Institute on the development of new detection methods for food pathogens.
